97 points Robert Parker

"The 2005 Cabernet Sauvignon Hillside Select continues to put on weight, and displays a Bordeaux-like personality because of the vintage’s cool growing season. A black purple color, stunningly sweet fruit, and a gorgeous bouquet of underbrush, forest floor, creme de cassis, lead pencil shavings, and toasty barrique are found in this ripe, full-bodied, deep, stunningly well-balanced, substantial wine with undeniable complexity as well as richness. It is approachable now, but promises to evolve for 25 or more years."

94-97 points Stephen Tanzer’s International Wine Cellar

"Bright ruby-red. Pure, vibrant aromas of blackberry, cassis, lead pencil, violet, licorice and minerals. Wonderfully fine-grained and deep, with sharp definition and lovely floral high notes to the flavors of blueberry, cassis and spice. Finishes with noble, suave tannins and outstanding slow-building length. This 100% cabernet wine has all the elements to make an outstanding bottle."

94 points Wine & Spirits

"The texture is often what sets Hillside Select apart from other Napa Valley cabernets… It appears to be seamless, sleek in the best sense of the word-a luxurious wine that feels authentic…A fine vintage of Hillside Select, this glows with the contemporary ripeness of Napa Valley cabernet without overreaching."

The 2008 growing season was marked by a series of hard frosts early in the growing season which severely effected yields. The 2008 Chardonnay harvest started slightly early on the 31st of August with Beltane Ranch, a 40 year dry farmed vineyard located on an east facing slope of the Mayacamas Range and ended on the 9th of October with Bien Nacido Vineyard, located in the Santa Maria Valley. The majority of the harvest took place during the 3rd and 4th weeks of
September.

Winemaking

  • 100% Chardonnay
  • Alcohol 14.2%
  • French oak aged for 13 months
  • Native yeast fermentation

Winemaker Notes

Each lot is lightly whole cluster pressed, allowed to settle for a day and placed into 100% French oak where it spontaneously ferments without the addition of cultured yeast. The barrels are stirred twice a month to round out the wine and build texture.

Tasting Notes

The wine exhibits baked pear and apple notes with lemon custard and sandalwood aromas with a hint of anise. In the mouth the wine adds orange blossom and toasted almond notes. The rich texture is complemented by crisp acidity, leaving a long balanced finish.

Suggested Food Pairing

This wine begs to be consumed with fresh Dungeness Crab, Cream based pasta dishes and nutty cheeses.

It is also the wine that has come to define the Talbott style, with seamlessly integrated oak and vibrant, cool-climate acidity.

Winemaking

  • 100% estate-grown Chardonnay
  • Alcohol 15.1%, pH 3.46, TA .68
  • Whole cluster pressed, tank settled and placed directly in French oak barrels
  • 100% barrel fermented, all French oak cooperage, 30% new
  • Inoculated with cultured yeast in barrel
  • Barrel-aged 12 months sur lie, stirred monthly
  • Bottle-aged eight months prior to release

Tasting Notes

This wine expresses the classic character for Talbott Chardonnay. Medium straw in color, the aromatics offer tropical flavors of guava, white peach and nectarine, accented by elements of pear, toasted hazelnut and citrus. The intensity of the wine’s bouquet is framed by a touch of French oak and toasty brioche notes. On the palate, this vintage shows a lush richness on the initial impression. The flavors echo the aromatics, and the finish is long, clean and bone dry, with bright citrus notes and minerality.

Robert Parker, The Wine Advocate – 91 Points

From their estate vineyards, the 2008 Chardonnay Sleepy Hollow Vineyard has a beautiful nose of honeysuckle, tropical fruit, and other assorted floral notes. Light straw-colored, it possesses full-bodied richness, good acidity, and some subtle underlying minerality. This is a beautiful Chardonnay to drink over the next 3-4 years.
